Steps
1. Cut the avocado in half and remove the pit. Scoop out a bit of flesh from each half to create enough space for the eggs.
2. Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
3. Place the avocado halves face down on the skillet and cook for 2-3 minutes until slightly browned.
4. Flip the avocado halves and crack an egg into each hollowed-out space.
5. Sprinkle salt and pepper over the eggs and cover the skillet with a lid.
6. Cook for 4-6 minutes until the eggs are cooked to your desired level of doneness.
7. While the eggs are cooking, sauté the spinach in a separate pan with a little olive oil until wilted.
8. Serve the avocado halves topped with the sautéed spinach.
