Mediterranean Avocado and Broccoli Clam Bake

Steps

1. Preheat your oven to 375°F (190°C). 2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. 3. Add broccoli and carrots to the skillet, season with salt and pepper, and cook for 3-4 minutes until slightly tender. 4. In a baking dish, layer the sautéed vegetables evenly. 5. Spread the drained clams over the vegetables. 6. Halve the avocado, remove the pit, and scoop out some flesh to make room for the filling. Place the avocado halves on top of the clams. 7. Drizzle lemon juice over the avocado and season with a pinch of salt. 8. Sprinkle crumbled feta cheese over the entire dish. 9. Bake in the preheated oven for 15-20 minutes until the cheese is golden and the dish is heated through. 10. Garnish with fresh parsley before serving.
