Steps
1. Preheat your oven to 200°C (400°F).
2. Toss the diced potatoes with olive oil, cumin, paprika, salt, and pepper. Spread them on a baking sheet and roast for 25 minutes or until golden.
3. While the potatoes are roasting, cook the pasta according to the package instructions until al dente. Drain and set aside.
4. In a saucepan, heat a little olive oil over medium heat. Add the chopped tomatoes and cook until they break down into a sauce, about 5 minutes. Season with salt and pepper.
5. Combine the cooked pasta with the tomato sauce and roasted potatoes, mixing gently to combine.
6. Serve hot, garnished with fresh parsley.
