Steps
1. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed and quinoa is fluffy.
2. Remove quinoa from heat and let it cool.
3. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives.
4. Once the quinoa is cool, add it to the vegetable mixture.
5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
6. Pour the dressing over the salad and toss to combine.
7. Garnish with fresh parsley before serving.
