Spicy Tomato and Potato Rice

This vibrant Indian dish combines the heartiness of potatoes with the tangy freshness of tomatoes, all served over fluffy rice. With a hint of ketchup for sweetness, it's an easy, comforting meal perfect for any vegetarian palate.

Steps

1. Rinse the rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain. 2. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds. 3. Add the chopped onions and sauté until they turn golden brown. 4. Stir in the diced potatoes and cook for about 5 minutes, stirring occasionally. 5. Add the chopped tomatoes, ketchup, turmeric, red chili powder, and salt. Cook until the tomatoes soften. 6. Add the soaked rice and 1 cup of water. Stir gently, then cover and bring to a boil. 7. Once it boils, reduce the heat to low and let it simmer for 15 minutes or until the rice is cooked and water is absorbed. 8. Fluff the rice with a fork and garnish with fresh coriander before serving.
