Spooky Stuffed Bell Peppers

These frighteningly delicious stuffed bell peppers are carved to resemble jack-o'-lanterns, perfect for a Halloween-themed dinner. Filled with a savory mix of quinoa, black beans, and spices, they're both festive and healthy.

Steps

1. Preheat the oven to 375°F (190°C). 2. Slice the top off the bell pepper and remove the seeds and membranes. 3. Using a small, sharp knife, carve a jack-o'-lantern face into one side of the bell pepper. 4. In a bowl, mix the cooked quinoa, black beans, salsa, cheddar cheese, cumin, salt, and pepper. 5. Stuff the bell pepper with the quinoa mixture and place the top back on. 6. Brush the outside of the pepper with olive oil. 7. Place the pepper in a baking dish and bake for 25-30 minutes, or until the pepper is tender. 8. Serve warm and enjoy your spooky creation!
