Steps
1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodles.
2. In a pan, heat olive oil over medium heat and sauté the minced garlic until fragrant.
3. Add the halved cherry tomatoes and cook until they start to soften, about 3-4 minutes.
4. Increase the heat and add the zucchini noodles, tossing them with the tomatoes for about 2-3 minutes until slightly tender.
5. Remove from heat and stir in the mozzarella cheese until melted and well-combined.
6. Season with salt and pepper to taste and garnish with fresh basil if desired.
