Curried Bean and Carrot Shakshuka

Steps

1. In a pan, heat oil and sauté garlic until fragrant. 2. Add diced carrots and cook until slightly softened. 3. Stir in curry powder and cooked beans, season with salt and pepper. 4. Make two wells in the mixture and crack eggs into them. 5. Cover and cook until eggs are set to your liking. 6. Serve hot.
