Spinach and Feta Borek

A delicious Turkish vegetarian dish made with layers of crispy phyllo pastry filled with a savory mixture of spinach, feta cheese, and herbs.

Steps

1. Preheat the oven to 375°F (190°C). 2. In a bowl, mix together the spinach, feta cheese, parsley, dill, salt, and pepper. 3. Place one sheet of phyllo pastry on a baking sheet and brush with olive oil. Repeat with the remaining sheets. 4. Spread the spinach and feta mixture evenly over the top sheet. 5. Roll up the pastry to form a log and tuck in the ends. 6. Brush the top with olive oil and bake for 20-25 minutes until golden brown. 7. Allow to cool slightly before slicing and serving.
