Steps
1. In a pot, simmer the oxtail in water for about 2 hours until tender. Remove and shred the meat.
2. In a food processor, blend chickpeas, parsley, garlic, cumin, coriander, paprika, salt, and pepper until smooth. Form into small balls.
3. Heat oil in a pan over medium heat and fry the falafel until golden brown.
4. Warm the pita or flatbread. Spread tahini sauce on it.
5. Layer shredded oxtail, falafel, and garnish with cucumbers and tomatoes.
