Steps
1. Season the beef short rib with salt and pepper.
2. In a skillet over medium heat, add olive oil and sear the short rib on all sides until browned.
3. Add enough water to cover the meat and simmer on low heat for approximately 3 hours, or until tender.
4. In another pan, melt butter over low heat, add sliced onions, brown sugar, and balsamic vinegar. Cook for about 15-20 minutes, stirring occasionally, until the onions are caramelized.
5. Once the short rib is cooked, shred the meat and place it on the sandwich roll.
6. Top with caramelized onions and a slice of cheese if desired.
7. Serve immediately, garnished with fresh herbs if using.
